Leg of Lamb
I have not met a lamb I did not like! Middle Eastern Lamb dinner, a royalty meal. I kid you not, this is a very easy recipe that I know you will master, and make for your very special Sunday dinners.
The leg of lamb cooks on the top of the stove in a medium size pot, and if you have a pressure cooker that’s even better, you can cut the cooking time in half. This method of cooking the leg in a pot will not dry the lamb and it will keep it tender, juicy and moist.
Baking the lamb in the oven often times tends to dry the lamb, especially if you are a beginner cook & you are unfamiliar with your oven’s temprtaure, I am not saying that I have never grilled the leg of lamb in the oven, but if you are a beginner cook, this a great way to cook lamb.
Leg of Lamb
1 leg of lamb
! tsp of 7 spices
1 large onion sliced
1 head of garlic clove peeled
1/4 cup of red wine
2 bay leaves
2 cinnamon sticks
1 cup of water
1/4 cup of vegetable oil
1 tsp salt
Season the leg of lamb with the spices, salt and rub well making sure the lamb is fully dredged. In a medium size pot, add the oil and heat well, add the lamb and brown on all sides, add in the onions, garlic, the bay leaves, cinnamon sticks and cook with the lamb about 10 minutes, add the red wine, the water and bring to a boil.
Simmer on low heat, cover and cook until the meat is tender & fully cooked. This should take about an 1 – 2 hours depending on the size of the lamb.
Transfer the lamb with a slotted spoon to an ovenproof serving dish & keep warm. Strain the pan juices into a saucepan, pressing hard on onions & garlic solids, and skim the fat. Boil the juices for 15 minutes, or until they are reduced to about 1/2 the amount or less. Serve the lamb with the pan juices and if you are serving rice pilaf or mashed potatoes this will make a delicious gravy for it.
If you are cooking for two you can substitute the leg of lamb for 1 – 2 lamb shanks, you will be happy with the results, it’s like Osso Bucco. When your lamb is done you can serve it as you like. For our delicious Lebanese Rice Pilaf recipe, click on link.
You can also serve with vegetables, place your favorite vegetables on a sheet pan, drizzle with olive oil, salt & black pepper and bake in a 400 degree oven for about 45 minutes. When done, plate the lamb & vegetables, If serving with rice or mashed potato, serve the gravy on the side.
